Stuffed Avocado Salad



Makes: 4 servings
Prep time: 5 minutes

Ingredients:
 2/3 cup crumbled feta cheese
 1 medium tomato, chopped
 1/2 medium red onion, chopped
 2 T fresh parsley, chopped
 2 T olive oil
 1 T red wine vinegar
 1 t dried oregano
 2 large avocados, halved and pitted

DIRECTION:

Mix all ingredients except the avocados in a bowl. Add salt and pepper to taste. Spoon into avocado halves. Refrigerate until ready to eat.
